Meet The Chef
Chef Carl Littlejohn leads the catering culinary team at the University of St. Thomas, and enjoys creating delicious food for not only the campus community but the many guests that come to campus for events. Before joining the Dining Services staff at St. Thomas, Littlejohn was the chef at RedRossa, an Italian restaurant in Bloomington. Prior to that, he led the kitchen at Ike's Bar and Grill in downtown Minneapolis. He's also worked for the D'Amico family of restaurants. Food critics praise his reverence for prime raw ingredients, his impressive food presentation, and his customer-friendly attitude of "promise less, deliver more."

It is the mission of Dining Services to provide excellent dining experiences, enriching and nourishing the University of St. Thomas community. As part of this mission, we provide a wide range of amenities that coincide with the diverse needs of our campus.
Types of Dining Services
Exclusive Alcohol Service
Alcohol service is available for a catered event through Dining Services for an additional fee.
Groups or individuals desiring to serve, possess or consume alcoholic beverages in St. Thomas licensed facilities must submit a Request to Serve/Use Alcoholic Beverages form to St. Thomas at least 30 days prior to the event. The form will be supplied by your catering manager.
Outside alcohol is not permitted on any campus location. This includes personally purchased alcohol.
Individuals possessing and/or consuming alcoholic beverages on the University of St. Thomas campus must be twenty-one (21) years of age or older. All events serving alcohol require catering staff, bartenders and security staff present.
